The Lookout Is Marketed as a Bar Hop. Wheat Ridge Holds Its Public Hearing on the Rules October 26.

"It's almost like a bar hop or a little food court," Boyd Hoback told Denver7 this month. Hoback is director of biergartens for Prost Brewing Co., and he was describing the shared outdoor space at The Lookout at Clear Creek Crossing. He added that Prost now has four locations, a fifth under construction in Colorado Springs, and that Wheat Ridge is the only one with this kind of common area.

That bar hop idea is the main pitch for the five-acre district at the southwest corner of I-70 and Highway 58. Announcing HashTAG's arrival on October 7, Mile High CRE described a "communal dining license that lets guests move freely between concepts with a drink in hand." In the same week, Denver7 reported that the city ordinance setting local rules for that kind of shared space had passed only its first reading, with a public hearing set for October 26. So the restaurants are opening this fall before the rules for the shared patio are settled.

Who is open, who is next, and who is still building

The Lookout is filling in one tenant at a time. Here is where each food and drink business at and around the district stood as of October 10, 2026:

Business Status as of October 10, 2026 What the date rests on
Prost Brewing Co. Open since August 3, 2026 Colorado Brewery List's opening date and Prost's live Wheat Ridge menu page
Bonfire Burritos, 4001 Clear Creek Dr Open daily, 6 a.m. to 2 p.m. Bonfire's own location page
HashTAG, 3625 Crossing Drive, Suite 100 Scheduled for October 15, 2026 TAG Restaurant Group announcement and HashTAG's locations page
The Agora at Applewood Under construction, with first guests hoped for in late 2026 Developer progress report from November 2025

Prost came first. Before it opened, the brewery said it would take about 6,800 square feet and include an enclosed patio, a private event space, a one-barrel research and development brewhouse, and 40 taps for beer, cocktails, wine, cider and nonalcoholic drinks. Its Wheat Ridge page now has full beer and food menus.

HashTAG is next, with one small catch. The HashTAG Wheat Ridge page shows two dates, "OPENS 10.22.26" in the location header and "Opens OCTOBER 15th" lower down. The company's locations page and the October 7 announcement both say October 15, and the locations page lists daily hours of 7 a.m. to 7 p.m. It's worth checking before the first visit.

HashTAG is built for the weekday crowd too

HashTAG made its name on weekend brunch, but the Wheat Ridge restaurant shows a different plan for the district. TAG Restaurant Group says this is Troy Guard's first restaurant in west Denver and the first HashTAG to use counter-to-table service. You order and get a drink at the counter, then take a table, and staff provide full service from there.

The announcement also says the location puts "a bigger focus on lunch." It's meant to be a daily stop and a quick lunch option for residents, hospital staff and office workers nearby, with the full weekend brunch still in place. The menu includes Eggs Benedict, chilaquiles, the Big Cast-Iron Cinnamon Roll, biscuits and gravy, and the platter-sized HashTAG Hotcakes, plus Bloody Marys, mimosas and the Big A$$ Breakfast Punch.

The counter-to-table setup ties directly to the shared patio. The announcement describes guests ordering at the counter and then sitting on the shared patio or in the park seating. That is easiest when a drink bought at one counter can go to a table that also serves the brewery next door. The shared patio makes that possible, and the city's rules for it are still pending.

What a communal outdoor dining area permits under Colorado law

The legal term is a communal outdoor dining area, or CODA. Colorado created it in HB 21-1027, which took effect June 22, 2021. Under the law, several on-premises liquor licensees can attach to one shared outdoor area if state and local authorities approve it. Each business has to be within 1,000 feet of the shared space.

The details are in C.R.S. 44-3-912. Each attached business needs a state permit and state and local approval of both the attachment and any changes to its premises. If a violation happens and the responsible business can't be identified, the attached licensees can be held jointly responsible. The law also has the state licensing authority write rules for these areas. Those rules cover how the attached businesses supervise and control the space, the security and control plans that state and local authorities must approve, and the removal of drinks from the shared area.

So "drink in hand" comes with limits. A CODA is a defined space that has to be approved, and both state rules and the participating businesses' approved plans decide how drinks move inside it and whether they can leave it.

October 26 is the hearing, and the patio itself would still need approval

Wheat Ridge's ordinance is the local piece the state law relies on. Wyatt Peterson, assistant to the city manager, told Denver7 that the ordinance would create a framework for businesses that share space but would not itself approve any CODA. He said the standards include clear boundaries and a required security plan:

"Because the CODA is shared, the participating licensees must operate under one security and control plan and remain responsible for compliance."

According to Denver7, four businesses with liquor licenses will share The Lookout's CODA once construction is finished. Prost is the only one named in the story. The other three haven't been publicly confirmed. Mile High CRE describes HashTAG, Prost and The Agora at Applewood as the district's anchors. The public hearing is scheduled for October 26, and Denver7 reported that the ordinance would take effect immediately if the council adopts it. The actual shared area at The Lookout would still need its own state and local approvals under the statute.

"There's a lot to figure out," Hoback said.

The park is ready now

The public park in the middle of the district doesn't depend on a liquor license. Evergreen Devco describes The Lookout as built around a public park with western views, an outdoor plaza, outdoor dining, and access to the Clear Creek Trail. Plans from landscape architect Norris Design include:

  • A community game lawn
  • An agriculture-themed playground
  • Fire pits
  • A small amphitheater and stage for performances, screenings and community events

Developer coverage says the amphitheater is meant for live music, movie nights and neighborhood events. We didn't find a public event schedule for October through December 2026.

The Agora at Applewood will fill out the district. Denver Post reporting described six concepts run by Osta Holdings: an Irish pub with a golf simulator, an Italian market with a deli and pizza, a cocktail bar with small plates, a family-friendly pub, a rooftop bar, and an ice cream and juice spot. The individual names haven't been announced. The most recent update, from November 2025, said construction was underway and the developer hoped to welcome guests in late 2026.

Quick answers

Can I carry a drink from Prost to HashTAG right now? The local framework for a shared area reaches its public hearing October 26, and the shared area at The Lookout still needs its own approvals after that. Ask staff on the day of your visit.

Can I take a drink onto the Clear Creek Trail? Under the CODA statute, state rules govern whether drinks can be taken out of a communal outdoor dining area. Staff at the participating businesses can tell you where the approved boundaries are.

When does HashTAG open? TAG Restaurant Group and HashTAG's locations page say October 15, 2026, and one header on its Wheat Ridge page says October 22.

When a new district like The Lookout opens on the west side, it often shapes how a nearby block feels and how buyers talk about it, even before every restaurant is open.
